DRY AGED FISH

Dry aging fish involves aging whole fish in a controlled environment with specific temperature and humidity levels provided by our Dry agers. The process intensifies flavors, improves texture, and reduces moisture content. It’s crucially important to select high-quality fish, monitor temperature and humidity, and age for a period ranging from days to weeks. The result is a more pronounced taste and enhanced mouthfeel, similar to dry-aged meats.

JAPANESE WAGYU BEEF

Ito wagyu is considered to be some of the highest quality wagyu beef in Japan, due to its exceptional marbling, tenderness, and flavor. The cattle are raised using traditional methods, including massaging and feeding a diet of rice straw and barley, which helps to develop the distinctive taste and texture of the beef.

In recent years, Ito wagyu has gained recognition and popularity internationally as a high-end luxury food. It is highly sought after by chefs and gourmet food enthusiasts for its delicate flavor, tenderness and high marbling score.

Japanese sake, often simply referred to as “sake,” is a traditional Japanese alcoholic beverage with a rich history and cultural significance.

At Dojo, we take pride in offering a unique selection of sake carefully chosen to complement our exquisite dishes. Our sake selection has been curated by Dennis Ekisola, who holds the Level 1 WSET (Wine & Spirit Education Trust) sake certification. This certification reflects Dennis’s expertise in the world of sake, ensuring that our guests enjoy the perfect pairing of sake with our culinary creations.
